Try Something New for Pies

It's not too late to wow your guest with something a little new.  Check out this recipe for goat cheese and garlic tarts from P. Allen Smith. Then check out more of his amazing ideas.

Goat cheese and roasted garlic tart

Pie dough

10 ounces soft mild goat cheese
1 cup cottage cheese
3 large egg yolks
1/4 cup all-purpose flour
1 stick (1/2 cup) unsalted butter, softened
2 roasted garlic cloves, minced
1 tablespoon chopped mixed fresh herbs such as thyme,
rosemary and lavender
2 to 3 tablespoons mixed whole fresh herb leaves
10-inch round tart pan with removable rim

Preheat the oven to 350° F.

Dust your bread board or other flat surface and a rolling
pin with flour. Roll out the dough into a 13-inch circle about
1/8 inch thick. Line a 10-inch round tart pan with the dough.
Prick the dough all over with a fork and chill for 30 minutes.
Bake tart shell in the preheated oven for 10 minutes or until
almost cooked through but still pale. Remove the tart pan
from the oven, but leave the oven on 350° F.
In a food processor blend cheeses, yolks, flour, garlic and
butter until smooth. Fold in the chopped herbs and pour
the filling into the baked tart shell. Place the tart in the 350°
F oven and bake until filling is just set, about 20 minutes.
Sprinkle the tart with herb leaves and continue baking until
filling and crust are golden. Cool the tart in the pan on a
rack and remove rim. Serve tart warm or at room temperature.

Think outside the box and imagine some other ways to use the goat cheese pie dough.
